Description
All-In is a nod to a decision that defined our vineyard. Pinot Noir was never the easy choice—it’s notoriously fussy in the vineyard and tough to grow in our climate. But after blind tasting wines from across the region, we knew it was the one. So we went all in.
WHAT TO EXPECT
This is our lightest red wine—delicate, silky, and refreshing. If you think you don’t like red wine, this might change your mind. It’s closer to a rosé in weight, but with the complexity of a red. Smooth tannins that won’t dry out your mouth.
PAIRS WITH JUST ABOUT EVERYTHING
Seared tuna with sesame and soy glaze, grilled chicken with thyme and lemon, charcuterie with pickled vegetables, or lentil salad with roasted carrots and herbs. This wine loves lighter proteins and earthy flavors.
HOW TO SERVE IT
Here’s a secret: lightly chill this wine for 15-20 minutes before serving. Aim for 55-60°F—cooler than room temp. It brings out the freshness and makes it even more enjoyable.
THE BACKSTORY
Made from estate-grown Pinot Noir, hand-harvested and cold-soaked for 12 hours to draw out color and aroma without heavy extraction. Fermented and aged in stainless steel to preserve freshness and purity of fruit. Bottled dry, with no residual sugar.
We named it All-In because that’s exactly what we did. And we’d do it again.
