Winter Edition: The Winemaker’s Den
A Michelin-Trained Chef. Unreleased Wines. One Night Only.
This is the kind of dinner you’d expect to find in New York City or Napa Valley, not Rochester. But on February 14th, we’re bringing it to the Finger Lakes.
Chef Tony trained at Eleven Madison Park, one of the most celebrated restaurants in the world. He’s cooked for Google, Apple, and Facebook in Silicon Valley. Now he’s building a five-course menu just for this evening, alongside Sous Chef David (Georges at the Cove), using techniques and flavors pulled from some of the best kitchens in the country.
You’ll be seated in our Winemaker’s Den, surrounded by tanks and barrels, candlelight, and wines that aren’t available anywhere else.
The Wines
Includes two gold medal wines, a never-released oak-aged Grüner Veltliner, and a custom red blend made just for this evening.
- Heartbeat Rosé – Gold medal, 94 points. Award-winning and one of our finest.
- Let’s See Where This Goes – Gold medal small-batch Riesling. We only made 20 cases. Typically reserved for club members only.
- Oak-Aged Grüner Veltliner – We made one barrel. It’s never been released, and this may be the only chance to try it.
- Curated Red Blend – Our head winemaker is leveraging his 15+ years of experience to create a magnificent red blend specifically to pair with the Beef Wellington. This wine won’t be bottled and is being made just for this dinner.
The Menu
Course 1
Tri-Colored Beet Rose Salad
Cucumbers, goat cheese, blood orange vinaigrette
Course 2
Carbonara Raviolo
Winter truffles, guanciale, egg yolk, parmesan, brown butter truffle sauce
Course 3
Lobster and Zucchini Rouleaux
Lobster hollandaise, poached lobster tail, zucchini, chili oil
Course 4
Beef Wellington
Celery root puree, spinach, beef jus
Course 5
Deconstructed Tiramisu
Housemade mascarpone ice cream, lady fingers, espresso meringue
Dessert is served in the tasting room with a final pour of late harvest wine and a S’mores Tart with chocolate ganache and burnt meringue.
Why This Dinner
There aren’t many places in Rochester (if any) where you can sit down to a five-course wine dinner in an actual cellar, with wines made specifically for the meal, prepared by a chef with Michelin-star training. We don’t do this often. When we do, it sells out.
If you’re looking for a way to make February 14th memorable, this is it. Not another prix fixe menu at a crowded restaurant. Something you’ll actually talk about.

We’ll arrange seating so you’re with the people you came with. If you’re purchasing tickets separately from others in your party, or if you have a seating request, just include that in the notes at checkout.

Dinner in the Vineyard is something we do two to three times a year at 20 Deep Winery.
