Description
Encore is what happens when you take our beloved Gamay Noir and add some bubbles. Made using the pét-nat (pétillant naturel) method—where the wine finishes fermenting in the bottle—this sparkling wine is lively, a little unpredictable, and totally fun.
WHAT TO EXPECT
This isn’t your typical sparkling wine. It’s lighter on the bubbles than Champagne, with a slight haze that’s completely natural (no filtering here). The flavors lean fruity and fresh, with the same bright character you love in our other Gamay wines. It’s dry, refreshing, and dangerously easy to drink.
Pét-nat wines can vary slightly from bottle to bottle—that’s part of the charm. Each one is a little different, a little alive.
PAIRS WITH JUST ABOUT EVERYTHING
Brunch foods (eggs, bacon, pastries), fried chicken, salty snacks, soft cheeses, or honestly just drink it on its own. This is a celebration wine that doesn’t need a reason.
HOW TO SERVE IT
Serve well-chilled, straight from the fridge. Open carefully—pét-nats can be a bit lively when you pop the cork.

We named it Encore because this wine is like the encore at a great concert—unexpected, exciting, and leaves you wanting more. Made from the same estate-grown Gamay Noir we use for Inside Out, but taken in a completely different direction. Bottle-fermented, unfiltered, and full of life.
