This small-batch Riesling started as a vineyard gamble. With noble rot setting in, we paused, trusted the timing, and thought—let’s see where this goes. The result? A wine shaped by risk, curiosity, and a little bit of magic. BevTest saw it too—awarding it 90 Points and a Gold Medal for “Exceptional” quality.
WHAT TO EXPECT
This is our sweetest wine—rich, honeyed, and complex. The noble rot (Botrytis) concentrates the sugars and adds layers of flavor you won’t find in our other wines. It’s a sipper, not a gulper. Best enjoyed slowly, maybe after dinner.
PAIRS WITH JUST ABOUT EVERYTHING
Blue cheese and honey, foie gras, fruit tarts, crème brûlée, or just on its own as dessert. This wine IS the dessert course.
HOW TO SERVE IT
Serve well-chilled (45-50°F). Pour small glasses—this is rich and meant to be savored. A white wine glass works, or a smaller dessert wine glass if you have one.
THE BACKSTORY
Made from hand-harvested estate Riesling grapes showing noble rot. Picked late in the season and sorted for Botrytis-affected clusters. Fermented and aged in stainless steel. Only 27 cases were made—when it’s gone, it’s gone.
THE RECOGNITION
In 2024, this wine earned 90 Points and a Gold Medal from the Beverage Testing Institute—one of the industry’s most respected independent tasting panels. They called it “Exceptional.” We call it a risk worth taking.
The hot air balloon on the label is perfect. It feels light, playful, and adventurous—a great metaphor for a wine that took a chance in the vineyard and soared.
